My husband is the Associate Pastor at our church and his primary responsibility is leading both Jr. & Sr. High Youth Groups. We love it, but our Wednesday nights are…well…crazy!
Now I really don’t mind crazy nights, but it’s frustrating that they seem to be a large speed bump in our desire to eat healthy. I am usually throwing together calorie laden chicken patties or nutrient lacking chicken nuggets or some other not healthy food and calling it supper. So my husband and I have put our heads together and come up with some options to solve this problem. On of them consists of me making a big pot of soup and a large salad, taking it to church, and eating their with the other leaders.
While nothing is in stone yet, I am trying to plan how this might work…and I need YOUR help in doing this. I am looking for CHEAP, but HEALTHY soup recipes that are EASY to make for a crowd of 14 to 18. I also would like it to have common EVERYDAY ingredients – ingredients I can buy at Aldis.
