FOR TODAY... from Mandy’s Daybook

Outside my window...
As I write it’s still dark out so I can’t see what it looks like out side my window!

I am thinking...
about how I wish I could have slept last night and wondering how I’m going to possibly get anything done today on 1 hour of sleep.

I am thankful for...
God’s unconditional love for me and the fact that He is always ready to listen to me and “hold” me in His arms when I’m lonely.

I am wearing...
my fluffy white spa robe that isn’t so fluffy anymore!

I am remembering...
how much God has provided for our family this year.

I am going...
try to clean the house, make a meal for company tonight, finish up some paperwork/design stuff for youth group, do several loads of laundry, mail some books out, and exercise for 45 minutes all today, and all on 1 hour of sleep.  I may going crazy!

I am reading...
several books, as usual!  But I just finished these two good ones.

I am hoping...
accomplish a lot of projects this week and spend some special time with my kids this week.

On my mind...
the engagement of my brother and the fun Justin & I had when were engaged over 8 years ago.

From the learning rooms...
this week we are working on chores.  I find that to be a difficult thing to establish in a set format for younger children who attend school outside the home.

Noticing that...
how quickly my children are growing up.

From the kitchen...
seasoned chicken legs, roasted parmesan potatoes, farm fresh corn, toss salad, and left over pies.

Around the house...
lots of projects to be completed!

One of my favorite things…
getting up early in the morning and getting a jumpstart on my day!

Will the last wish of a a wife, mother, and grandmother actually be realized? Will the untimely death of a beautiful, young mother bring over due reconciliation or create a greater family divide? And will a hand-carved, wooden soldier become a cherished keepsake or continue as a symbol of conflict?

This book mixes a little bit of history with sad a tale of father-son conflict, and adds Christmas cheer to make it a story you won't soon forget. I enjoyed reading this book with it's honest characters and tear-jerking story line. Walsh has written a story that both young and old, male and female, will enjoy.

A sequel is scheduled to be published in June of 2010.

The Christmas Dog is a delightful book that will spark your Christmas spirit!

melody Melody Carlson had written a sweet and sassy story about Christmas and life through the eyes of a widow. When Betty's routine life suddenly gets interrupted by suspicious neighbor, a runaway granddaughter, and a mangy mutt, it looks like Christmas might just crumble.

However, by "killing with kindness", Betty overcomes frustration and fear and to find the heart of Christmas once again. This story will stir the tenderness of your heart and have you laughing at the same time. I enjoyed a good does of Christmas cheer with this relaxing and easy read.

I came across the above video and the Advent Conspiracy website when I landed on Simply Mel’s post through BlogFrog hopping.

The ironic thing is that I was feeling a little blue about our Christmas plans this year until I watched this video clip.  It was a great reminder for me to refocus on the true meaning of Christmas and how we can celebrate without all the “traditions”.

Merry Bobmas… or Merry Christmas!

Today is a day that some spend all year planning for.  You know the ones.  They make lists of what stores to go to and when to be there for what deals they want.

This crazy day is known as….BLACK FRIDAY(I feel like I should have some sort of scary music to play for this part.)

Maybe you are one of those shoppers who will battle the lines and beat the crowds for the best deals. 

Or maybe you are at home.  Like I am.  *sigh*  (Someday when the kids are older I will be one of those crazy shoppers!)

However, no matter where you are today, most likely you still have some shopping to do in the few weeks.  Unless you fall into the small percentage of people who are so organized that they had there’s done last January. (I dislike love those kinds of people!  *cough, cough*)

For those of you who fall into the “still-need-to-shop” category, I have a website that you might find to be helpful.  It is called Stand For Christmas and it’s purpose is to help you know how “Christmas-friendly” individual retailers are this year.  You can go there and read customer reviews and even rate the stores where you like to shop.

Happy Thanksgiving from our home to yours!

Our family is off to spend the afternoon with my family celebrating God’s goodness to us in both the good times and the tough times.  I hope you take time to enjoy your family, friends, food, football….and most of all take time to reflect on all you have to be thankful for.

Rejoice always, pray without ceasing, give thanks in all circumstances, for this is the will of God in Christ Jesus for you.” – 1 Thessalonians 5:16-18

We are spreading the warmth this Thanksgiving by participating in some random acts of kindness.  The above pictures are of a meal that I made and will be delivering to a friend in need of some encouragement.

A Gettysburg Getaway: Our 3 Day Trip To Visit Civil War Memorials

Gettysburg is becoming our little getaway place. 

Justin has taught me how to enjoy history, especially civil war history, and Gettysburg is one of the best places to go to enjoy learning more about that time period.

For the second year in a row we got away for 3 days – sans kids – to celebrate our anniversary.

This is one of the very yummy breakfasts we enjoyed at the Dobbin House Bed & Breakfast where we stayed.  It was served in one of the original buildings in a very “old” setting.  A really neat experience.  I also got hot chocolate served in an old style tavern cup.  (Or whatever you call those things!)0910090846

Simple Woman’s Daybook – Nov. 23rd

simple-woman-daybook-largeOutside my window... overcast skies and chilly air.  I think Winter is on it’s way.

I am thinking... about how I get to give away these 2 wonderful books to a lucky reader tomorrow morning!

I am thankful for... the good health our family is enjoying right now.  Besides minor colds and fevers we are all fine.  Praise God for that huge blessing!

I am wearing... My old “cleaning” jeans with my comfy old “maine” sweatshirt that I have had since I was 15. 

I am remembering... what my life was like just 4 years ago.  Very different.

I am going... to the local print shop, the chiropractor, the grocery store, Walmart, and the post office…but not all today!

I am reading...Who Do I Talk To by Neta Jackson.

I am hoping... to get a LOT done today.  Our house is a wreck after a long weekend with a lot of chaos.

On my mind... balance.  I want to be a balanced person and that is hard to find sometimes.

From the learning rooms... working with Abby on school work from 2 missed days of school last week & teaching her the NT books of the Bible.

Noticing that... I need to take a week to just spend time with my Lord and Savior and refresh.

From the kitchen... Hmmm…not sure yet….I need to plan this week’s menu!

Around the house... cleaning, washing, scrubbing….all before 2pm today! Ahhhhhhhhh!

Taco Meat Recipe: Trench Style

I really like tacos.

Really!

Like I really, really, really enjoy them!

But it seems to me that you go through a bit of work for a small amount of taco meat.  So here’s how we make our taco meat here in the trenches.

First, we start with 3 pounds of meat. 1 pound beef, and 2 pounds venison.  I like the venison because it’s so lean and with my hunting husband, it’s a cheap addition to the table!

I brown the meat in a pan like this…downsized_1105091203 When it’s all brown, I drain the grease and then add 3 packs of taco seasoning – mixing it in really well.  Then I add the water - approximately 2 cups.

While that simmers in a covered pot, I fix 2 cups of rice per package directions. (Add 2 cups dry rice to 5 cups boiling water. Simmer for 15 minutes. Stir once. Cover and let sit for 5 minutes.)

When the rice is done I dump both the rice and the taco meat into a large tupperware bowl.downsized_1105091443 I mix them together and then dish into small freezer containers that hold enough mixture to make tacos for one dinner for our family.  (About 4 meals from one batch.)

I like doing this because the rice makes the meat stretch farther on a tight budget.  Plus I use half brown rice…so it’s adding some good stuff to the meal!  But my top reason is that it makes 4 meal in the time that it takes to make 1 meal!  And you know what that means….downsized_1105091443a

God Provides: Even With Refrigerator Compressor Problems

This is my refrigerator.1109091346 Actually, it was my refrigerator. 

On Sunday afternoon I pulled out my favorite ice cream, Chocolate Marshmallow, and found that it was no longer ice cream but rather a container of chocolate soup.

This began a crazy few hours as we transferred food and called a friend to figure out what the exact problem was.

It quickly became clear that despite the fact it was only 7 & 1/2 years old, the compressor was gone.  Shot.  No more.

I did a quick search online and was shocked at how much just a basic fridge was.  I began to pray that God would somehow provide since this appliance is sort of necessary. 

Okay…really necessary!

Within hours we had word that someone in our church had an old fridge they were willing to give us.  So on Monday we were blessed with 4 men that helped Justin to load up the old one and bring in the new one.

Well, it’s new to us.  Even though it’s 19 years old!downsized_1110090802 And what’s more important is that it’s working and we can eat at home.  Rather than at my Moms!  (Thanks Mom for the meals while we took care of this problem!)

God provided and it was cool to experience!

Last Year At This Time…

…I went deer hunting for the first time.  I spent the day with my husband, my Dad, my brothers, and several other guys who I’ve known my whole life.

It was fun.  Even though I didn’t come home with anything.  So Micah still had to pet my Great Grandfather’s deer that hangs on my parent’s wall.

Tomorrow is the first day of the season for this year. 

But rather than be out walking the woods, I will be in my warm bed, sound asleep. 

I will be up all night with the teens at a big youth rally event and even deer can’t lure me out after being up all night!

Easy Tips On How To Buy Christmas Gifts Without Blowing Your Budget: A Guest Post By Marybeth Whalen

The catalogs arrive.

My children—who didn’t even know they needed a whole truckload of toys—suddenly become convinced that they, in fact, do. And the ensuing weeks are spent begging, whining, and listing off the many things their hearts desire. As a parent, it never gets easier to navigate between their lists of wants and needs, deciding what can stay and what can go. We want to give them everything, yet we know we shouldn’t. At Christmas more than ever, our hearts stray towards the thought of their little faces lighting up as they find something they never expected waiting for them that morning. And then the budget busting begins.

I have found that, with six kids to buy Christmas for, it got easier and easier to scale back—simply out of necessity. I started observing what they really enjoyed receiving and what they really played with. I noted that some of the things they got were truly a waste of money and cut out those things with ease and no regrets. A few tips I have learned are:

1 - Only give kids what they asked for. Don’t go buy a bunch of things you think they might want as a “surprise.” The biggest surprise, then, is on you when that credit card bill comes in the mail. It is best to just stick to your guns and realize that they won’t miss what they never had.

2 - Begin to cut back little by little. If you have been doing too much and you know it, you can do a little less this year, then a little less the next, and so on until you have effectively scaled back.

3 - Shop ahead. Instead of saving up all your shopping for between Thanksgiving and Christmas, start collecting things all through the year. Look for creative ways to save money. One time a friend of mine and I were traveling over Labor Day weekend and discovered that Cracker Barrel was having a wonderful sidewalk sale. We were able to pick up great gifts for lots of people on our list at deep discounts. We stopped at every Cracker Barrel between North Carolina and Florida to find the best deals. We still laugh over that little adventure! We were pretty proud of our finds. I also buy presents at the Scholastic warehouse sale. Check www.scholastic.com to see if there is one in your area. Twice a year, they put everything in the warehouse on sale for half off. This includes not just books but art supplies, kits, posters, games, etc. You do have to be an educator to get in, but homeschoolers are included! I also pick up art supplies and kits using my Michael’s coupons. My friend Holly confessed to me that she only spent $30 total on her two boys last year by picking up their gifts at yard sales! And everything she bought was still in the box!

4 - Start the three present rule, based on what Jesus received from the three wise men. We started this years ago, and I love it! I tell my kids, “If it was good enough for Jesus, it is good enough for you!” Who can argue with that? A good rule of thumb for this is based on the three gifts that Jesus received: gold, frankincense, and myrrh. Gold is the frivolous or fun gift—the big ticket item they have their heart set on. Frankincense symbolized worship, so this is the spiritual growth gift—a Bible, a book on being a godly kid, a Christian video, or something of the sort. And finally, myrrh is the gift that symbolized death—what Jesus was sent to do. This gift is a practical gift around what the child’s bents or talents are. It could be special supplies for an artist or a microphone for a singer, etc. This could also be something practical like an item of clothing. Three items, plus gifts from family members, plus trinkets in their stockings is still far more than what many children in this world will see in their lifetime!

5 - When you are talking with your children about Christmas, ask them what was their favorite gift they gave this year instead of what was their favorite gift they received? This helps the focus to stay on giving and not receiving, and gets them thinking in these terms at a young age.

6 - Instead of more junky toys, suggest what I call “experience gifts” from the grandparents. Experience gifts are great because they afford your kids an experience they will never forget—and most times the memories last much longer than the plastic toys that break or get lost. Some experience gifts we have given or received are:

  1. Gift certificates for manicures (great for tweens and teens)
  2. Starbucks giftcards with a promise to take them to get a special drink
  3. Disposable cameras with tickets to an event
  4. Magazine subscriptions
  5. A coupon detailing a special day just for that child—lunch out, a movie, etc.
  6. Passes to activities they enjoy—rock climbing, roller skating, golf, bowling, etc.
  7. Passes to a local theme park or zoo.
  8. A gift certificate to a favorite restaurant
  9. Science kits—check out Treasure Box Press (www.treasureboxpress.com) or Insect Lore (www.insectlore.com) for some great ones
  10. Kitchen utensils with a certificate for a cooking class
  11. A gift for the whole family— a new computer or family membership to a museum
  12. A camping kit for the adventurous type—rope, flashlight, canteen, pocketknife
  13. A beauty kit for the princess—hairbrush, lotion, barrettes, ponytail holders, lip gloss, styling products, etc.

One year, my grandmother gave each of my children $10. As we were deciding what to spend their money on, the suggestions were coming from everyone. Suddenly I had a burst of inspiration. What if we took all the money and put it together? We could splurge on a great night eating out at our most favorite restaurant—the Japanese steakhouse (where they cook all the food in front of you). You can imagine how expensive it is to eat there for a family of eight, but by putting all our money together, we were able to do it—and have a fantastic time together in the process! Though I couldn’t tell you one single thing any of my children received that year, I will never forget that night out. That was money well spent, in my opinion!

Buying for other people is hard as well. There is always that feeling of not knowing what to buy and yet wanting somehow to honor that person just by letting them know you were thinking of them. I have found that many times simple is better. Some of my most well-received gifts didn’t cost much money, but they meant something to the recipient. My gift didn’t say, “I love you so I spent lots of money on you.” My gift said, “I love you enough to know who you are and what makes you smile.”

I gave a little angel that said “Faith” on it to a friend who is going through a long, arduous adoption process and needs a focal point to remind her that this journey she is on requires faith. I gave a recipe book with all my best recipes hand written in it for a friend who had recently gotten married. Just after my stepfather lost his sister to cancer, I found a photo of her and my mom that he had forgotten about. I knew that he would love to have that photo framed, so I bought a little frame for it. I will never forget the look on his face when he opened it, or the tears that ran down his face as he stared first at it, then at me. “How did you?” he began, then stopped. While we began cleaning up all the wrapping paper, he sat in the floor transfixed. Today that photo has a place of honor in their house, and I know that was a gift he appreciated—not because I spent a fortune, but because I found something that meant something to him. The wise men gave gifts that came from their hearts. Their gifts both meant something and said something. That is what I strive for when I shop—a way to do more than cross another gift off my list, but to truly say, “I see you and I love you.”

Sometimes it is easy to miss the point—especially when we look at the gift giving craziness all around us. I will never forget one Christmas standing in line at the post office behind a woman whose arms were laden with packages, while even more were on the ground at her feet. As we moved closer to the front, she would awkwardly kick the packages ahead. Just to make conversation, I gestured at the number of boxes and said in jest, “That’s why I just send gift cards!”

But my humor was lost on her as she gestured to her purse. “Oh,” she said, “I buy those too! I have 65 gift cards in here to mail out!”

I have never forgotten that encounter, as I tried to wrap my brain around how much money this woman had spent on those gifts. Even if she only bought ten-dollar gift cards, she would have spent $650 just on those! And those were just for her family that lived out of town! I went home and shared my story with my husband, who shook his head. Christmas can definitely be a time of going a bit crazy with spending and giving.

Don’t get me wrong. Gift giving is a wonderful thing. I just think that too often we do it for the wrong reasons—because it is expected, or we are guilted into it, or because we want to make a good impression on someone. And yet, as we are trying to have joy at Christmas and focus on Jesus, where exactly does buying a lot of stuff figure in? How can we give intentionally, joyfully? This is an important question to ask ourselves as we endeavor to enjoy our Christmases without going broke.

Meet Author Julie Cantrell

AuthorPhoto Julie Cantrell is a certified speech-language pathologist with years of experience helping children develop communication skills. As a freelance writer, she has written countless articles on the topics of parenting, family, faith, child development, education, and health. She also wrote for MOPS, Intl. (Mothers of Preschoolers) for nearly a decade, where she served as contributing editor for MOMSense magazine. She currently writes for Princeton HealthCare System and FNC, Inc.

Julie's first picture books, God is with Me through the Day and God is with Me through the Night were published this year by Zondervan to help young children overcome fears while building their faith in God.

God Is With Me Through The Day & Night: Julie Cantrell Kids Books – Review & Giveaway

I have yet to meet a child that has never been afraid!

My Abigail is probably among the most fearful.  She get’s it naturally.  I’m a big scaredy cat, too!

However, we now own two new resources to help us work through our kid’s night time and day time fears!  And you could win your own set of these adorable kids books, too!  Just keep reading to find out how.

God Is With Me Through The Night and God Is With Me Through The Day are two very adorable books for kids ages 4-7.  Although, my 2 year old loves them, too.   And quite honestly, I enjoy reading them, too!

Each book features cute pictures of animals that will make your children laugh.  And the words are easy to read in their fun and colorful font.  Most importantly the message is easy for children to understand and relate to.  And as the titles says, they are all about God being with us both day and night.

Simple Woman’s Daybook – Nov. 16th

Outside my window... cloudy skies

I am thinking... that I hope this pacifier habit breaking soon gets easier!  I’m tired of the fussing that is happening.

I am thankful for... my parents and the Biblical upbringing they gave me despite their human imperfections.

I am wearing... my old dungy cleaning jeans and my favorite Penn State sweatshirt that I has been “mine” since Justin & I were dating!

I am remembering... what a blessing I had in my teen years to have 3 wonderful friends who I will always feel close to no matter the miles.

I am going...  to MOPS this week and to a huge, overnight youth event with our teens on Friday. 

I am reading... The Language of Love & Respect by Dr. Emerson Eggerichs

I am hoping... get my house completely cleaned today!

On my mind... how hard it is to have to sit by and watch the people you love the most endure such pain.

From the learning rooms... going to make a matching game for Abby to learn her SPARKS verses and NT books of the Bible.

Noticing that... when I drink Pepsi my face breaks out.  It’s a high price to pay for a few sips of sweet liquid.

From the kitchen... homemade bread, leftovers for supper tonight.

Around the house... piles of wash and a table to wax on top of my normal Monday chores.

One of my favorite things~ The scent of a clean house after a hard day’s work.
